I would like to use my XF8 keyboard as a sound module.

First off, Is it possible to do this?
I believe it should be.

How do I go about setting different sounds to receive different midi channels?

I didn’t find anything in the manual.

Yes.  Use either Song or Pattern mode to setup a multi-timbral instrument set.
