How is the A/D input on the ES assigned/used? I want to run other equipment through it (mic, guitar, drum machne, etc) but I cannot find a detailed explanation of how to use it. Thanks!

I suggest starting with the ES Owner’s Manual - see the section Inputting audio from a microphone, instrument or other audio device on page 10. The information beginning on page 72 should be particularly helpful, but look at the other pages listed there as well.

Unfortunately, there doesn’t appear to be a support article specifically about using the A/D INPUT on the ES. There are such articles for other Motif-family models. You might find some generally useful information in them…
