When I’m recording a guitar that’s plugged into the A/D inputs, what do I need to set so that I only monitor what is coming from the DAW (Cubase). I use several plugins on the guitar (i.e., VST Amp Rack); however, I can hear both the direct, clean signal and the processed signal after engaging the track’s Monitor switch in Cubase.  I can’t remember if it’s something onboard the MOXF or within the DAW.

This could well be the Direct Monitor switch in USB I/O on your MOXF.

Because you are hearing the direct audio signal AND the returning audio signal simultaneously, it sounds like yours is set to ON.

When Direct Monitor is OFF, your audio signal will have to go to the computer and come back to your MOXF via the DAW level slider in order for you to hear it, which is very likely what you want.

I’d expect some latency this way, especially if you have VST re-amping plugins on inserts.
