ie layer a piano and a string both on midi channel one so I can use another keyboard via midi to control and sound both of the layer

if yes how do you do it?

and is it in the manual anywhere?

From the MX Owner’s Manual (page 42 or 44, depending on the manual version)…
The MIDI Receive channels for Parts 1 - 16 of the instrument are fixed to 1 - 16.

However, some settings can be changed by using third-party editors.
