Following on from my voice stealing issue, how can I force the MM6, through Cubase LE, to record instruments as mono recordings instead of stereo, voice hogging recordings?

If you record your MM6 Voices to Cubase LE (in mono or stereo) they will not use polyphony in the MM6 any longer.

MIDI tracks are neither mono or stereo… So you must be referring to recording you MM6 as AUDIO. Only AUDIO Tracks can be mono or stereo. So if you are recording audio tracks in Cubase, then the polyphony issue in the MM6 ceases to be an issue.

Audio has the advantage of transferring your performance so that it no longer makes any polyphony demands on the unit generating the sounds.

If you were recording an acoustic guitar or your voice to a track, (as audio) you could then reuse your acoustic guitar or your voice, again and again, and the track would play while you added new parts - and you could continue to do so until you run out of tracks.

If you are running out of polyphony - simply use Cubase as you would any multi-track recorder. The ultimate answer to running out of polyphony. Do you have an audio interface?

With a simple audio interface you can start to multi-track audio tracks to Cubase and open an entirely new world for your music.
